Cauliflower “Meatballs”


Here is a fun vegetarian recipe that is versatile and healthy.  Plus is fun to make and kids will love helping.  We like these “meatballs” with Pasta (quinoa pasta for me).  Another fun way to serve them is to make them into an appetizer.  Add a toothpick and some BBQ sauce for dipping and… voilà ready to go.

 Cauliflower “Meatballs”


2 tbsp chopped Onion (we use Cipollini)

1 tbsp chopped Peppers (we use mini sweet peppers)

1 tsp Coconut Oil

1 small head of Cauliflower (fresh)

2 eggs, whisked

2 cups unsweetened or slightly sweetened corn cereal (we use THIS)

1 tbsp Italian Seasoning (or a mix of whatever italian seasonings you have on hand…rosemary, basil, oregano, etc)

1/2 tsp Cumin

1/2 tsp Sea Salt

Sauté the onions, pepper and coconut oil a pan over medium heat until slightly caramelized (about 3-4 minutes) and set aside.  Rinse your cauliflower well and rough chop, removing any stems or leaves.  Add the cauliflower to a food processor and pulse for a minute or two.  Add the onion mixture and remaining ingredients and pulse a bit more till combined.   Your dough will still be a little chunky but should be well combined.  Form small balls with the dough (kids love helping with this part).  If your dough is a little soft use a spoon.  Place them on a parchment lined baking sheet and bake for 40-45 minutes at 350 degrees(f).  Serve warm with your favorite dish.
