Two amazing FALL recipes… Three ingredients each.

It’s FALL. The season of all things pumpkin and apple. If you are anything like me you love to take it all in! We all know that winter (which is kind of a bad word in my house…) lies ahead of us, so until then I will savor every minute of fall in Madison.

I have two go-to fall recipes that I use over and over and repeatedly get asked for the recipes from my friends and family. I am a tad embarrassed to admit that both of my go-to recipes have 3 ingredients (each)… it kind of takes away from my attempt to seem domestic. But the fact that they are absolutely delicious helps me overcome any shame I have at being a novice in the kitchen!

Let’s start with Chocolate Chip Pumpkin Muffins. The first time I had these was shortly after my daughter (now 14 months) was born. A friend brought them over, along with dinner, and I knew right away that I HAD to have this recipe. I was expecting a long list of ingredients and cooking instructions, but instead was given three ingredients (with an option to add a 4th – chocolate chips). I’m forever grateful to my dear friend Jacey for providing me with this recipe. Every time I bake them my house smells like FALL and my whole family is able to enjoy the muffins -including my one year old (and did I mention they are actually not bad for you… that’s right – a guilty pleasure with no eggs, butter or oil!)

Pumpkin Muffin Ingredients:

1 box of spice cake mix
1 can of pumpkin
1 cup of water
{chocolate chips optional}

Method:

Pre-Heat the oven to 350 degrees. Mix together in medium bowl: spice cake mix, pumpkin and water until well blended. Pour the mixture into muffin cups or tins and bake for 25 minutes.

I usually add chocolate chips {because I have an addiction to all things chocolate…} but it’s totally optional! Another option is to skip the cup of water (and muffin tin altogether) and just mix the pumpkin/spice cake mix and put the ‘batter’ on a cookie sheet for ‘Pumpkin Cookies’! You can also freeze these to have a yummy snack for weeks to come!

My next go-to FALL recipe is a simple apple dip. OH.MY.GOODNESS – you are going to LOVE this one! My sister-in-law just happens to be an amazing cook. I am constantly asking her for recipes. She had this at a  birthday party for my niece a few years back and it has become a fall (and actually year-round…) staple in my house. And again – only THREE ingredients!!! So go pick all those fresh, delicious, crisp apples at the many Wisconsin orchards and come home to this dip… I promise you that your taste buds will thank you!

Heath Bit Apple Dip Ingredients:

1 cup brown sugar
8 oz cream cheese (softened)
1/3 bag of heath bar toffee bits

Method:

Soften the cream cheese. Mix together the cream cheese, brown sugar and heath toffee bits in medium bowl until well blended. Refrigerate and serve with sliced apples.

It’s seriously THAT easy! I promise that you will not be disappointed – and neither will your houseguests! So, unless someone asks you for the recipe(s)… go on and feel like the Domestic Goddess that you are!

      It is seriously SO good! I could eat it by the spoonful but using apples makes me feel like I’m eating something healthy 🙂

    I just pulled the muffins out of the oven…they are so good! I added chocolate chips to some and chocolate chips, chopped pecans, and coconut to the rest. I’m going to freeze some to keep fall going and going…if theyr’e not all eaten on the way to the freezer. Thanks for the recipe!
